Food Safety (Food Hygiene) CIEH Level 4 Award (Cancelled)

This food and drink sector-specific course meets industry needs for a high-level practical qualification in food hygiene. This course will enable you to define and control food safety in your organisation, gain an in-depth understanding of food safety and hygiene, and acquire a recognised qualification from the Chartered Institute of Environmental Health (CIEH).

This course is suitable for those in managerial of supervisory roles in a food preparation environment.

Course content

During this course you will cover topics including:

  • Bacteriology
  • Food poisoning and foodborne disease
  • Physical contamination of food and its prevention
  • Food storage and temperature control
  • Food preservation
  • Design and construction of food premises and equipment
  • Cleaning and disinfection
  • Pest control
  • Personal hygiene
  • Education and training of food handlers
  • Legislation
  • Management control techniques

Assessment methods

An examination will be given at the end of the course, on a date set by the Chartered Institute of Environmental Health (CIEH). This paper is marked externally.

Further study and career options

You will have a sufficient level of food hygiene knowledge to work effectively in a food preparation environment in a management role.
