Food Safety Award (Food Hygiene) CIEH Level 2 Award

This course will enable you to keep up-to-date with food hygiene requirements and gain a recognised qualification from the Chartered Institute of Environmental Health (CIEH). This course will help you learn techniques and regulations of safe food handling and hygiene control, minimise risk through effective and safe storage of food stuffs, and manage and train staff in a food-handling environment.


Entry requirements

This course is suitable for anyone employed in the food and drink industry or working with food in their job role.

Course content

During the course you will cover topics including:

  • Food storage, temperature control and preservation
  • Food premises and equipment
  • Cleaning, disinfection and personal hygiene
  • Food poisoning, disease, bacteriology and pest control
  • Legislation
  • Supervisory management and control techniques
  • Training of food handlers

Assessment methods

An examination will be given at the end of the course, on a date set by the Chartered Institute of Environmental Health (CIEH). The paper is marked externally.

Further study and career options

You will have a sufficient level of food hygiene knowledge to work in a food preparation environment in a junior role.
